This is a Russian cuisine dish its a non vegetarian dish
Here is a simple recipe for filled pancakes which are one of the Russian favourites. You can use anything instead of minced meat – berries, cottage cheeze, kidney, fish, etc. – for different satisfying dishes.
Dough:
- 250 g flour
- 2.5 glasses milk
- 3 eggs
- 0.5 tablespoon sugar
- salt
- butter for frying
Filling:
- 500 g minced meat
- 1 onion
- 2 tablespoons oil
- meat stock cube
First we prepare the pancake dough:
Mix eggs with salt and sugar.
Add half a glass of milk and flour.
Mix the dough well until it is smooth.
Add the remaining milk.
Properly prepared dough should resemble and flow freely like 10% sour cream.
Next we prepare the filling. I use meat mince in this example:
Fry the chopped onion in oil until it is transparent.
Add the mince and a little meat broth.
You can also add boiled and chopped eggs with pepper and salt to the mince. Boiled rice is a nice addition too.
Heat a frying pan well, grease it with lard (white hard pig’s fat) or butter.
Pour dough on the frying pan with a mug or ladle and rock/rotate/turn/swivel the pan until all the dough fills the whole surface thinly.
Brown one side of a pancake.
Remove the pancake and put the filling on the brown side of a pancake.
Fold the pancake like an envelope.
Fry both sides of a pancake on the buttered frying pan.
Serve while hot with sour cream on top.
