Cashewnut roll or Kaju roll is a sweet dish which not only looks great but also tastes good here is the recipe from Sanjeev Kapoor from celebrity chef of Khana Khazana.
A mixture of cashewnuts,sugar,milk and khoya rolled in a pancake and steamed.
Preparation Time :10-15 minutes
Cooking Time :20-25 minutes
Refined flour (maida) 200 grams
Baking powder 1/2 teaspoon
Rice powder 2 tablespoons
Milk as required
Oil to shallow fry
Honey as required
Cashewnuts, coarsely powdered 1/2 cup
Khoya, grated 1/2 cup
Powdered sugar 2-3 tablespoons
Milk 2 tablespoons
Take some flour in a bowl, add baking powder along with some rice powder and mix well. Add some milk and whisk well to make a smooth batter. Put some crushed cashewnuts in a bowl. Add khoya, powdered sugar and mix again. Add a small amount of milk and mix. Heat sufficient amount of water. Heat a pan, pour two ladles full of batter and rotate the pan to spread it evenly. Cook till the underside is done. Gently remove the pancake and set aside. Make more pancakes similarly. Place the pancakes on the worktop and put some filling on one end of each. Roll and place them on a dish. Place the dish in the steamer and steam for five minutes. Alternatively heat a little oil in a pan, place some rolls on it and cook till lightly golden all around.
